Ingredients

- 2 salmon fillets (6 oz each)
- 1 tbsp Cajun seasoning
- 1 tbsp olive oil
- 1 bell pepper, sliced
- 1 zucchini, sliced
- 1 red onion, sliced
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Toss vegetables with olive oil, garlic powder, salt, and pepper.
- Spread vegetables on a baking sheet and roast for 15 minutes.
- Coat salmon with Cajun seasoning.
- Add salmon to the baking sheet and roast for another 10-12 minutes.
- Serve hot.
