A flavorful and spicy chicken dish with Brazilian-inspired coconut sauce.
Ingredients

- 2 lbs chicken thighs, boneless and skinless
- 1 can (13.5 oz) coconut milk
- 2 tbsp olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 red bell pepper, sliced
- 1 tbsp ginger, grated
- 1 tbsp paprika
- 1 tsp cayenne pepper
- 1 tsp turmeric
- 1 lime, juiced
- Salt to taste
- Fresh cilantro, chopped (for garnish)
Instructions
- Heat olive oil in a large pan over medium heat.
- Add onion, garlic, and bell pepper. Sauté until softened.
- Add chicken thighs and cook until browned on both sides.
- Stir in ginger, paprika, cayenne, and turmeric. Cook for 1 minute.
- Pour in coconut milk and lime juice. Bring to a simmer.
- Reduce heat and cook for 20-25 minutes until chicken is tender.
- Season with salt and garnish with fresh cilantro before serving.
Notes
- Adjust cayenne pepper for more or less heat.
- Serve with rice or steamed vegetables.
- Leftovers taste even better the next day.
