Ingredients

  • 2 lbs chicken thighs, boneless and skinless
  • 1 can (13.5 oz) coconut milk
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 tbsp ginger, grated
  • 1 tbsp paprika
  • 1 tsp cayenne pepper
  • 1 tsp turmeric
  • 1 lime, juiced
  • Salt to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add onion, garlic, and bell pepper. Sauté until softened.
  3. Add chicken thighs and cook until browned on both sides.
  4. Stir in ginger, paprika, cayenne, and turmeric. Cook for 1 minute.
  5. Pour in coconut milk and lime juice. Bring to a simmer.
  6. Reduce heat and cook for 20-25 minutes until chicken is tender.
  7. Season with salt and garnish with fresh cilantro before serving.

Notes

  • Adjust cayenne pepper for more or less heat.
  • Serve with rice or steamed vegetables.
  • Leftovers taste even better the next day.
