Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 packet taco seasoning
  • 1 cup cooked rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 diced avocado
  • 1 diced tomato
  • 1/2 cup shredded lettuce
  • 1/4 cup sour cream
  • 1/4 cup shredded cheese
  • 1 tbsp hot sauce

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add ground beef and cook until browned.
  3. Stir in taco seasoning and 1/4 cup water. Simmer for 5 minutes.
  4. Assemble bowls with rice as the base.
  5. Top with beef, beans, corn, avocado, tomato, and lettuce.
  6. Drizzle with sour cream and hot sauce.
  7. Sprinkle cheese on top.
  8. Serve immediately.
