- 1 whole chicken, cut into pieces
- 2 cups buttermilk
- 2 cups all-purpose flour
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon cayenne pepper
- Vegetable oil for frying
Instructions
- In a large bowl, soak the chicken pieces in buttermilk for at least 2 hours, preferably overnight in the refrigerator.
- In another bowl, mix together the flour, salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper.
- Remove the chicken from the buttermilk, allowing the excess to drip off, then dredge each piece in the seasoned flour, ensuring it is fully coated.
- In a large skillet or deep fryer, heat about 1 inch of vegetable oil over medium-high heat until it reaches 350°F (175°C).
- Carefully add the chicken pieces to the hot oil, skin side down, and fry in batches for about 15-20 minutes, or until golden brown and cooked through, turning occasionally.
- Use a meat thermometer to check that the internal temperature of the chicken reaches 165°F (75°C).
- Once cooked, remove the chicken from the oil and place it on a wire rack or paper towels to drain excess oil.

Notes
- For extra crunch, double dip the chicken by returning it to the buttermilk and then back to the flour before frying.
- You can add your favorite hot sauce to the buttermilk for a spicy kick.
