  • 1 whole chicken, cut into pieces
  • 2 cups buttermilk
  • 2 cups all-purpose flour
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper
  • Vegetable oil for frying

Instructions

  1. In a large bowl, soak the chicken pieces in buttermilk for at least 2 hours, preferably overnight in the refrigerator.
  2. In another bowl, mix together the flour, salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper.
  3. Remove the chicken from the buttermilk, allowing the excess to drip off, then dredge each piece in the seasoned flour, ensuring it is fully coated.
  4. In a large skillet or deep fryer, heat about 1 inch of vegetable oil over medium-high heat until it reaches 350°F (175°C).
  5. Carefully add the chicken pieces to the hot oil, skin side down, and fry in batches for about 15-20 minutes, or until golden brown and cooked through, turning occasionally.
  6. Use a meat thermometer to check that the internal temperature of the chicken reaches 165°F (75°C).
  7. Once cooked, remove the chicken from the oil and place it on a wire rack or paper towels to drain excess oil.

Notes

  • For extra crunch, double dip the chicken by returning it to the buttermilk and then back to the flour before frying.
