Ingredients

  • 1 tablespoon baking powder

  • 1/2 cup unsalted butter
  • 3/4 cup buttermilk
  • 1 pound ground sausage
  • 2 cups milk
  • 1 teaspoon black pepper

Instructions

  1. Preheat your oven to 450°F (230°C).
  2. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. Add the cold butter to the flour mixture and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
  4. Pour in the cold buttermilk and stir until just combined. Do not overmix.
  5. Turn the dough out onto a floured surface and pat it into a rectangle about 1 inch thick.
  6. Fold the dough over itself a few times and gently roll out to 1 inch thick again.
  7. Cut out biscuits using a floured biscuit cutter and place them on a baking sheet.
  8. Bake for 12-15 minutes or until golden brown.
  9. While the biscuits are baking, prepare the gravy. In a large skillet over medium heat, cook the ground sausage until browned.
  10. Sprinkle the flour over the sausage and stir to combine, cooking for another minute.
  11. Gradually whisk in the milk, stirring constantly until the gravy thickens. Season with black pepper and salt to taste.
  12. Serve the hot biscuits smothered in the sausage gravy.

Notes

  • For extra flaky biscuits, make sure the butter is very cold.
  • You can add additional spices like cayenne pepper for a spicy kick in the gravy.
  • Leftover biscuits can be stored in an airtight container and reheated in the oven.
