A classic Southern dish featuring fluffy biscuits smothered in creamy sausage gravy.
Ingredients

- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1/2 cup unsalted butter
- 3/4 cup buttermilk
- 1 pound ground sausage
- 2 cups milk
- 1 teaspoon black pepper

Instructions
- Preheat your oven to 450°F (230°C).
- In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
- Add the cold butter to the flour mixture and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
- Pour in the cold buttermilk and stir until just combined. Do not overmix.
- Turn the dough out onto a floured surface and pat it into a rectangle about 1 inch thick.
- Fold the dough over itself a few times and gently roll out to 1 inch thick again.
- Cut out biscuits using a floured biscuit cutter and place them on a baking sheet.
- Bake for 12-15 minutes or until golden brown.
- While the biscuits are baking, prepare the gravy. In a large skillet over medium heat, cook the ground sausage until browned.
- Sprinkle the flour over the sausage and stir to combine, cooking for another minute.
- Gradually whisk in the milk, stirring constantly until the gravy thickens. Season with black pepper and salt to taste.
- Serve the hot biscuits smothered in the sausage gravy.
Notes
- For extra flaky biscuits, make sure the butter is very cold.
- You can add additional spices like cayenne pepper for a spicy kick in the gravy.
- Leftover biscuits can be stored in an airtight container and reheated in the oven.
