Ingredients

- 2 cups sourdough starter
- 2 cups high-protein flour
- 1 cup water
- 1 tablespoon salt
- 1 tablespoon honey
- 1 tablespoon olive oil
- 1 tablespoon poppy seeds (optional)
Instructions
- In a large bowl, mix sourdough starter, water, and honey.
- Add flour and salt. Mix until a dough forms.
- Knead the dough for 10 minutes.
- Let the dough rise for 4 hours at room temperature.
- Preheat the oven to 425°F (220°C).
- Shape the dough into bagels and let them rest for 30 minutes.
- Boil water in a large pot and gently place bagels in the water for 1 minute on each side.
- Place bagels on a baking sheet and sprinkle with poppy seeds.
- Bake for 25 minutes or until golden brown.
- Cool before serving.
Notes
- Use a strong sourdough starter for best results.
- Store bagels in an airtight container.
- Bagels can be frozen for later use.
