Instructions

  1. Mix sourdough starter, bread flour, salt, sugar, and warm water in a bowl.
  2. Knead the dough until smooth and elastic.
  3. Cover and let the dough rise for 2 hours.
  4. Divide the dough into 8 equal pieces.
  5. Shape each piece into a bagel.
  6. Let the bagels rest for 30 minutes.
  7. Preheat the oven to 425°F (220°C).
  8. Boil water and add baking soda.
  9. Boil each bagel for 1 minute on each side.
