- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 cup pumpkin puree
- 1 large egg
- 1 tsp vanilla extract
- 4 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 1 1/2 cups powdered sugar
- 1/2 tsp vanilla extract
Instructions
- Preheat oven to 350°F. Line baking sheets with parchment paper.
- Whisk together flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt in a bowl.
- Cream butter, granulated sugar, and brown sugar until light and fluffy.
- Add pumpkin, egg, and vanilla. Mix well.
- Gradually add dry ingredients to wet ingredients and mix until combined.
- Drop spoonfuls of dough onto baking sheets. Bake for 12-14 minutes.
- Cool cookies on a wire rack.
- For frosting, beat cream cheese and butter until smooth. Add powdered sugar and vanilla. Mix until creamy.
- Spread frosting on cooled cookies.
Notes
- Store cookies in an airtight container for up to 3 days.
- For best texture, do not overmix the dough.
- Use canned pumpkin puree, not pumpkin pie filling.
