Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, mix pumpkin puree, sugars, melted butter, egg, and vanilla extract.
- In another bowl, whisk flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
- Gradually add dry ingredients to wet ingredients, stirring until combined.
- Fold in chocolate chips.
- Drop spoonfuls of dough onto the prepared baking sheet.
- Bake for 10-12 minutes or until edges are lightly golden.
- Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
- Store in an airtight container for up to 3 days.
- For crispier cookies, bake an extra 1-2 minutes.
- You can replace chocolate chips with nuts or raisins if preferred.
