Ingredients

- 2 cups of chicken broth
- 1 cup of diced carrots
- 1 cup of diced potatoes
- 1 cup of chopped onions
- 2 cups of cooked chicken, shredded
- 1 teaspoon of thyme
- Salt and pepper to taste
- 2 tablespoons of olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions and cook until translucent.
- Stir in carrots and potatoes; cook for 5 minutes.
- Add chicken broth and thyme; bring to a boil.
- Reduce heat and simmer for 20 minutes.
- Add shredded chicken; season with salt and pepper.
- Simmer for another 10 minutes before serving.
Notes
- Serve with crusty bread.
- Use leftover turkey for a different flavor.
- Can add frozen peas for extra nutrition.
