Ingredients

  • 2 cups of cooked chicken, shredded
  • 1 teaspoon of thyme
  • Salt and pepper to taste
  • 2 tablespoons of olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions and cook until translucent.
  3. Stir in carrots and potatoes; cook for 5 minutes.
  4. Add chicken broth and thyme; bring to a boil.
  5. Reduce heat and simmer for 20 minutes.
  6. Add shredded chicken; season with salt and pepper.
  7. Simmer for another 10 minutes before serving.
