Ingredients

- 2 cups of chicken broth
- 1 cup of diced carrots
- 1 cup of diced potatoes
- 1 cup of diced celery
- 1 teaspoon of thyme
- 1 teaspoon of salt
- 1/2 teaspoon of pepper
- 2 cups of cooked chicken, shredded
- 1 cup of frozen peas
- 1 cup of heavy cream
- 1 pie crust
Instructions
- In a large pot, combine chicken broth, carrots, potatoes, and celery.
- Add thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add cooked chicken and peas, and simmer for another 5 minutes.
- Stir in heavy cream and heat through.
- Pour mixture into a pie crust and cover with another crust.
- Cut slits in the top crust to vent.
- Bake at 375°F for 45 minutes or until golden brown.
Notes
- Feel free to add other vegetables like corn or green beans.
- You can use store-bought pie crust or make your own.
