Ingredients

  • 2 cups of chicken broth
  • 1 cup of diced carrots
  • 1 cup of diced potatoes
  • 1 cup of diced celery

  • 1 teaspoon of salt
  • 1/2 teaspoon of pepper
  • 2 cups of cooked chicken, shredded
  • 1 cup of frozen peas
  • 1 cup of heavy cream
  • 1 pie crust

Instructions

  1. In a large pot, combine chicken broth, carrots, potatoes, and celery.
  2. Add thyme, salt, and pepper.
  3. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Add cooked chicken and peas, and simmer for another 5 minutes.
  5. Stir in heavy cream and heat through.
  6. Pour mixture into a pie crust and cover with another crust.
  7. Cut slits in the top crust to vent.
  8. Bake at 375°F for 45 minutes or until golden brown.
