Ingredients

  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 lb ground beef (or plant-based substitute)
  • 1 (15 oz) can pumpkin puree
  • 1 (14.5 oz) can diced tomatoes
  • 1 (15 oz) can kidney beans, drained
  • 1 (15 oz) can black beans, drained
  • 2 cups vegetable broth
  • 2 tbsp chipotle peppers in adobo, minced
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until softened.
  3. Add ground beef, cook until browned. Drain excess fat if needed.
  4. Stir in pumpkin puree, diced tomatoes, beans, and vegetable broth.
  5. Add chipotle peppers, chili powder, cumin, smoked paprika, salt, and black pepper.
  6. Bring to a boil, then reduce heat and simmer for 25-30 minutes.
  7. Adjust seasoning to taste and serve hot.

Notes

  • For a vegetarian version, use plant-based ground meat.
  • Adjust chipotle peppers for more or less heat.
  • Top with shredded cheese, sour cream, or fresh cilantro.
