- 1 tbsp olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 lb ground beef (or plant-based substitute)
- 1 (15 oz) can pumpkin puree
- 1 (14.5 oz) can diced tomatoes
- 1 (15 oz) can kidney beans, drained
- 1 (15 oz) can black beans, drained
- 2 cups vegetable broth
- 2 tbsp chipotle peppers in adobo, minced
- 2 tsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until softened.
- Add ground beef, cook until browned. Drain excess fat if needed.
- Stir in pumpkin puree, diced tomatoes, beans, and vegetable broth.
- Add chipotle peppers, chili powder, cumin, smoked paprika, salt, and black pepper.
- Bring to a boil, then reduce heat and simmer for 25-30 minutes.
- Adjust seasoning to taste and serve hot.
Notes
- For a vegetarian version, use plant-based ground meat.
- Adjust chipotle peppers for more or less heat.
- Top with shredded cheese, sour cream, or fresh cilantro.
