Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tbsp smoked paprika
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 cups mixed vegetables (bell peppers, zucchini, carrots)
  • 1 cup couscous
  • 1 1/4 cups chicken broth
  • 2 tbsp chopped fresh herbs (parsley, cilantro)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Rub chicken with smoked paprika, salt, and black pepper.
  3. Heat olive oil in a pan and sear chicken for 3 minutes per side.
  4. Place chicken on a baking sheet with mixed vegetables and roast for 20 minutes.
  5. Prepare couscous by boiling chicken broth and pouring over couscous. Cover and let sit for 5 minutes.
  6. Fluff couscous with a fork and mix in fresh herbs.
  7. Serve chicken and vegetables over couscous.
