Ingredients

- 4 boneless, skinless chicken breasts
- 2 tbsp smoked paprika
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 2 cups mixed vegetables (bell peppers, zucchini, carrots)
- 1 cup couscous
- 1 1/4 cups chicken broth
- 2 tbsp chopped fresh herbs (parsley, cilantro)
Instructions
- Preheat oven to 400°F (200°C).
- Rub chicken with smoked paprika, salt, and black pepper.
- Heat olive oil in a pan and sear chicken for 3 minutes per side.
- Place chicken on a baking sheet with mixed vegetables and roast for 20 minutes.
- Prepare couscous by boiling chicken broth and pouring over couscous. Cover and let sit for 5 minutes.
- Fluff couscous with a fork and mix in fresh herbs.
- Serve chicken and vegetables over couscous.
