- 4 bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- 1 tablespoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper (optional)
- Wood chips for smoking (hickory or applewood recommended)
Instructions
- Preheat your smoker to 250°F (121°C).
- In a bowl, mix together olive oil, smoked paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.
- Pat the chicken thighs dry with paper towels and rub the spice mixture all over the chicken, making sure to get under the skin as well.
- Place the chicken thighs in the smoker skin-side up and add wood chips to the smoker according to the manufacturer’s instructions.
- Smoke the chicken thighs for about 2 to 2.5 hours, or until the internal temperature reaches 165°F (74°C).
- Remove the chicken from the smoker and let it rest for 10 minutes before serving.
Notes
- For extra crispy skin, you can finish the chicken on a hot grill for a few minutes after smoking.
- Feel free to adjust the seasonings to your taste preferences.
- Make sure to use a meat thermometer to check for doneness.
