  • 4 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper (optional)
  • Wood chips for smoking (hickory or applewood recommended)

Instructions

  1. Preheat your smoker to 250°F (121°C).
  2. In a bowl, mix together olive oil, smoked paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.
  3. Pat the chicken thighs dry with paper towels and rub the spice mixture all over the chicken, making sure to get under the skin as well.
  4. Place the chicken thighs in the smoker skin-side up and add wood chips to the smoker according to the manufacturer’s instructions.
  5. Smoke the chicken thighs for about 2 to 2.5 hours, or until the internal temperature reaches 165°F (74°C).
  6. Remove the chicken from the smoker and let it rest for 10 minutes before serving.

Notes

  • For extra crispy skin, you can finish the chicken on a hot grill for a few minutes after smoking.
