Description

Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 1 cup uncooked orzo
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup fresh spinach
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 tsp dried Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Place chicken thighs in the slow cooker.
  2. Add orzo, chicken broth, heavy cream, sun-dried tomatoes, garlic, Italian seasoning, salt, and black pepper.
  3. Cover and cook on low for 4-5 hours or until chicken is tender.
  4. Shred chicken with a fork.
  5. Stir in spinach and Parmesan cheese until wilted and melted.
  6. Serve warm.
