- 1.5 lbs boneless, skinless chicken thighs
- 2 medium sweet potatoes, peeled and cubed
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 can (14 oz) coconut milk
- 2 tbsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup chicken broth
- 1 tbsp olive oil
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a pan over medium heat. Sauté onion, garlic, and ginger until fragrant, about 3 minutes.
- Add chicken thighs and cook until slightly browned, about 5 minutes.
- Transfer the chicken and onion mixture to the slow cooker.
- Add sweet potatoes, coconut milk, chicken broth, curry powder, turmeric, cumin, salt, and pepper. Stir well.
- Cover and cook on low for 6 hours or high for 3 hours.
- Serve hot, garnished with fresh cilantro.
Notes
- For a thicker sauce, remove the lid for the last 30 minutes of cooking.
- Adjust spices to taste.
