Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 4 medium carrots, sliced
  • 3 medium potatoes, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen peas
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil (for browning beef)
  • Fresh parsley (for garnish, optional)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add the beef cubes and brown on all sides, about 5-7 minutes.
  2. Transfer the browned beef to the slow cooker.
  3. In the same skillet, add the onions and garlic, cooking until softened, about 3-4 minutes. Add to the slow cooker.
  4. Add the carrots, potatoes, peas, beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper to the slow cooker. Stir to combine.
  5. Cover and cook on low for 8 hours or on high for 4 hours, until the beef is tender and the vegetables are cooked through.
  6. Taste and adjust seasoning if needed. Garnish with fresh parsley before serving.

Notes

  • You can add other vegetables like green beans or bell peppers based on your preference.
  • For thicker stew, mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir into the stew during the last 30 minutes of cooking.
