- 2 pounds beef chuck, cut into 1-inch cubes
- 4 cups beef broth
- 4 medium carrots, sliced
- 3 medium potatoes, diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup frozen peas
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil (for browning beef)
- Fresh parsley (for garnish, optional)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add the beef cubes and brown on all sides, about 5-7 minutes.
- Transfer the browned beef to the slow cooker.
- In the same skillet, add the onions and garlic, cooking until softened, about 3-4 minutes. Add to the slow cooker.
- Add the carrots, potatoes, peas, beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper to the slow cooker. Stir to combine.
- Cover and cook on low for 8 hours or on high for 4 hours, until the beef is tender and the vegetables are cooked through.
- Taste and adjust seasoning if needed. Garnish with fresh parsley before serving.
Notes
- You can add other vegetables like green beans or bell peppers based on your preference.
- For thicker stew, mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir into the stew during the last 30 minutes of cooking.
