Description

Ingredients

  • 2 pounds beef chuck roast, cut into 1-inch pieces
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup sour cream
  • 2 tablespoons all-purpose flour
  • 12 ounces egg noodles
  • Fresh parsley, chopped for garnish (optional)

Instructions

  1. In a slow cooker, combine the beef, onion, garlic, mushrooms, beef broth, Worcestershire sauce, paprika, salt, and pepper.
  2. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender.
  3. In a small bowl, mix the sour cream and flour until smooth.
  4. Stir the sour cream mixture into the slow cooker during the last 30 minutes of cooking.
  5. Meanwhile, cook the egg noodles according to package instructions.
  6. Serve the beef stroganoff over the egg noodles and garnish with fresh parsley if desired.

Notes

  • For a thicker sauce, you can add more flour to the sour cream mixture.
