- 2 pounds beef chuck roast, cut into 1-inch pieces
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup sour cream
- 2 tablespoons all-purpose flour
- 12 ounces egg noodles
- Fresh parsley, chopped for garnish (optional)
Instructions
- In a slow cooker, combine the beef, onion, garlic, mushrooms, beef broth, Worcestershire sauce, paprika, salt, and pepper.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender.
- In a small bowl, mix the sour cream and flour until smooth.
- Stir the sour cream mixture into the slow cooker during the last 30 minutes of cooking.
- Meanwhile, cook the egg noodles according to package instructions.
- Serve the beef stroganoff over the egg noodles and garnish with fresh parsley if desired.
Notes
- For a thicker sauce, you can add more flour to the sour cream mixture.
- Feel free to add other vegetables like peas or carrots for extra nutrition.
