A creamy and comforting slow cooker beef stroganoff that’s perfect for busy weeknights.


Ingredients

  • 2 pounds beef stew meat, cut into bite-sized pieces
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 1 cup sour cream
  • 2 tablespoons all-purpose flour
  • Cooked egg noodles, for serving
  • Fresh parsley, chopped, for garnish

Instructions

  1. In a slow cooker, combine beef stew meat, onion, garlic, mushrooms, beef broth, Worcestershire sauce, Dijon mustard, paprika, salt, and pepper.
  2. Stir to combine and cover the slow cooker with the lid.
  3. Cook on low for 7-8 hours or on high for 4-5 hours until the beef is tender.
  4. In a small bowl, mix the sour cream and flour together until smooth.
  5. About 30 minutes before serving, stir the sour cream mixture into the slow cooker and mix until well combined.
  6. Cover and continue to cook for the remaining time.
  7. Serve over cooked egg noodles and garnish with fresh parsley.

Notes

  • For a richer flavor, sear the beef in a skillet before adding it to the slow cooker.
  • You can add other vegetables like carrots or peas for extra nutrients.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
