Ingredients

- 2 pounds beef stew meat, cut into bite-sized pieces
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 1 teaspoon paprika
- Salt and pepper, to taste
- 1 cup sour cream
- 2 tablespoons all-purpose flour
- Cooked egg noodles, for serving
- Fresh parsley, chopped, for garnish
Instructions
- In a slow cooker, combine beef stew meat, onion, garlic, mushrooms, beef broth, Worcestershire sauce, Dijon mustard, paprika, salt, and pepper.
- Stir to combine and cover the slow cooker with the lid.
- Cook on low for 7-8 hours or on high for 4-5 hours until the beef is tender.
- In a small bowl, mix the sour cream and flour together until smooth.
- About 30 minutes before serving, stir the sour cream mixture into the slow cooker and mix until well combined.
- Cover and continue to cook for the remaining time.
- Serve over cooked egg noodles and garnish with fresh parsley.
Notes
- For a richer flavor, sear the beef in a skillet before adding it to the slow cooker.
- You can add other vegetables like carrots or peas for extra nutrients.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
