  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil (for browning beef)
  • 2 tablespoons cornstarch (optional, for thickening)

Instructions

  1. In a large skillet, heat olive oil over medium-high heat. Add the beef cubes and brown on all sides, about 5-7 minutes.
  2. Transfer the browned beef to the slow cooker. Add carrots, potatoes, onion, and garlic.
  3. In a bowl, mix together beef broth, red wine (if using), tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper.
  4. Pour the mixture over the beef and vegetables in the slow cooker.
  5. Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is tender.
  6. If you prefer a thicker stew, mix cornstarch with a little water to create a slurry and stir it into the stew. Cook on high for an additional 30 minutes to thicken.
