- 2 pounds beef chuck, cut into 1-inch cubes
- 4 medium carrots, sliced
- 3 medium potatoes, diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 cup red wine (optional)
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil (for browning beef)
- 2 tablespoons cornstarch (optional, for thickening)
Instructions
- In a large skillet, heat olive oil over medium-high heat. Add the beef cubes and brown on all sides, about 5-7 minutes.
- Transfer the browned beef to the slow cooker. Add carrots, potatoes, onion, and garlic.
- In a bowl, mix together beef broth, red wine (if using), tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper.
- Pour the mixture over the beef and vegetables in the slow cooker.
- Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is tender.
- If you prefer a thicker stew, mix cornstarch with a little water to create a slurry and stir it into the stew. Cook on high for an additional 30 minutes to thicken.

- For extra flavor, consider adding a bay leaf or a splash of soy sauce.
- Serve with crusty bread for a complete meal.
