Description
Tender slow-cooked roast beef with Tuscan herbs, served with a fresh Italian green salad.
Ingredients

- 1.5 kg beef roast (top round or chuck)
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp dried rosemary
- 1 tsp dried thyme
- 4 garlic cloves, minced
- 1 onion, sliced
- 1 cup beef broth
- 4 cups mixed salad greens (arugula, radicchio, endive)
- 1/4 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 2 tbsp balsamic vinegar
- 2 tbsp extra virgin olive oil
- 1/4 tsp salt
Instructions
- Rub the beef with olive oil, salt, pepper, rosemary, thyme, and minced garlic.
- Place sliced onions in the slow cooker and add the beef on top.
- Pour beef broth around the roast.
- Cover and cook on low for 8 hours or high for 4-5 hours.
- Remove the beef, let it rest for 10 minutes, then slice.
- Toss salad greens, cherry tomatoes, and red onion.
- Whisk balsamic vinegar, extra virgin olive oil, and salt for the dressing.
- Drizzle the dressing over the salad and serve with sliced beef.
Notes
- For extra flavor, sear the beef before slow cooking.
- Let the beef rest before slicing to keep it juicy.
