A hearty and flavorful slow-cooked beef roast inspired by Tuscan cuisine, served with a fresh and vibrant Italian green salad.

- 3–4 pounds beef roast
- 2 tablespoons olive oil
- 4 garlic cloves
- 1 onion
- 2 carrots
- 2 celery stalks
- 1 can (14.5 oz) canned diced tomatoes
- 2 cups beef broth
- 1 cup red wine
- 2 teaspoons Italian seasoning

- to taste black pepper
- 1/4 cup fresh parsley
- 6 cups mixed salad greens
- 1 cup cherry tomatoes
- 1 cucumber
- 1/4 red onion
- 1/2 cup balsamic vinaigrette
Instructions
- Heat olive oil in a large skillet over medium-high heat. Sear the beef roast on all sides until browned, about 4-5 minutes per side.
- Transfer the seared roast to a slow cooker. Add garlic, onion, carrots, celery, diced tomatoes, beef broth, red wine, Italian seasoning, salt, and pepper.
- Cover and cook on low for 8-10 hours or until the beef is fork-tender.
- Once cooked, remove the roast from the slow cooker and let rest for a few minutes before slicing.
- Meanwhile, in a large bowl, combine salad greens, cherry tomatoes, cucumber, and red onion.
- Drizzle with balsamic vinaigrette and toss to combine.
- Serve the sliced beef roast with the Italian green salad on the side, garnished with chopped parsley.
Notes
- For extra flavor, marinate the beef roast in the red wine and Italian seasoning overnight before cooking.
- Feel free to add other vegetables such as bell peppers or potatoes to the slow cooker for a heartier meal.
