  • 4 garlic cloves
  • 1 onion
  • 2 carrots
  • 2 celery stalks
  • 1 can (14.5 oz) canned diced tomatoes
  • 2 cups beef broth
  • 1 cup red wine
  • 2 teaspoons Italian seasoning

  • 1/4 cup fresh parsley
  • 6 cups mixed salad greens
  • 1 cup cherry tomatoes
  • 1 cucumber
  • 1/4 red onion
  • 1/2 cup balsamic vinaigrette

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Sear the beef roast on all sides until browned, about 4-5 minutes per side.
  2. Transfer the seared roast to a slow cooker. Add garlic, onion, carrots, celery, diced tomatoes, beef broth, red wine, Italian seasoning, salt, and pepper.
  3. Cover and cook on low for 8-10 hours or until the beef is fork-tender.
  4. Once cooked, remove the roast from the slow cooker and let rest for a few minutes before slicing.
  5. Meanwhile, in a large bowl, combine salad greens, cherry tomatoes, cucumber, and red onion.
  6. Drizzle with balsamic vinaigrette and toss to combine.
  7. Serve the sliced beef roast with the Italian green salad on the side, garnished with chopped parsley.
