A simple and comforting potato soup recipe.
Ingredients

- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup milk
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat.
- Add the onion and garlic, and sauté until softened.
- Add the diced potatoes and vegetable broth.
- Bring to a boil, then reduce heat and simmer until potatoes are tender.
- Puree the soup using an immersion blender or regular blender.
- Stir in the milk and season with salt and pepper.
- Heat through and serve hot.
Notes
- Adjust the thickness by adding more or less milk.
- Top with chives or cheese if desired.
