- 2 cups of fresh asparagus, trimmed

- 1 teaspoon of thyme
- 1 tablespoon of butter
Instructions
- Preheat your oven to 400°F (200°C).
- On a baking sheet, toss the asparagus with olive oil, salt, and pepper. Spread them out in a single layer.
- Add the halved cherry tomatoes to the baking sheet, drizzle with olive oil, and sprinkle with salt and pepper.
- Roast in the oven for about 15 minutes until the asparagus is tender and the tomatoes are blistered.
- Meanwhile, in a small saucepan, melt butter over medium heat. Add baby carrots, honey, and thyme. Cook for about 5-7 minutes until the carrots are tender.
- Once the asparagus and tomatoes are done, remove them from the oven and sprinkle with Parmesan cheese.
- Serve the roasted veggies alongside the honey-glazed carrots for a beautiful and tasty Easter side dish.
