Instructions

  1. Preheat your oven to 400°F (200°C).
  2. On a baking sheet, toss the asparagus with olive oil, salt, and pepper. Spread them out in a single layer.
  3. Add the halved cherry tomatoes to the baking sheet, drizzle with olive oil, and sprinkle with salt and pepper.
  4. Roast in the oven for about 15 minutes until the asparagus is tender and the tomatoes are blistered.
  5. Meanwhile, in a small saucepan, melt butter over medium heat. Add baby carrots, honey, and thyme. Cook for about 5-7 minutes until the carrots are tender.
  6. Once the asparagus and tomatoes are done, remove them from the oven and sprinkle with Parmesan cheese.
