Description

A quick and easy recipe for shrimp fried rice, perfect for a weeknight dinner or a weekend treat.


Ingredients

  • 2 cups cooked rice (preferably day-old)
  • 1/2 lb shrimp, peeled and deveined
  • 2 eggs, beaten
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 green onions, chopped

Instructions

  1. Heat oil in a large skillet or wok over medium-high heat.
  2. Add minced garlic and cook for 30 seconds until fragrant.
  3. Add shrimp and cook until pink, about 2-3 minutes. Remove and set aside.
  4. In the same skillet, add beaten eggs and scramble until fully cooked. Remove and set aside.
  5. Add mixed vegetables to the skillet and stir-fry for 2-3 minutes.
  6. Add cooked rice, soy sauce, oyster sauce, salt, and pepper. Stir well to combine.
  7. Add cooked shrimp and scrambled eggs back to the skillet. Stir-fry for another 2 minutes.
  8. Garnish with chopped green onions and serve hot.

Notes

  • Use day-old rice for best results to prevent the dish from becoming mushy.
  • You can substitute shrimp with chicken or tofu if preferred.
  • Adjust the amount of soy sauce and oyster sauce to suit your taste.
