Ingredients

  • 2 cups cooked rice (preferably day-old)
  • 1 pound shrimp, peeled and deveined
  • 1 cup mixed vegetables (carrots, peas, bell peppers, etc.)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 2 green onions, chopped
  • 1 egg, beaten
  • Salt and pepper to taste
  • Cooking oil for frying

Instructions

  1. Heat a large skillet or wok over medium-high heat and add a tablespoon of cooking oil.
  2. Add the shrimp to the skillet and cook until they turn pink and are cooked through, about 3-4 minutes. Remove the shrimp from the skillet and set aside.
  3. In the same skillet, add another tablespoon of oil and add the minced garlic. Sauté for about 30 seconds until fragrant.
  4. Add the mixed vegetables and cook for 2-3 minutes until they are tender.
  5. Push the vegetables to the side of the skillet and pour the beaten egg into the center. Scramble the egg until fully cooked, then mix it with the vegetables.
  6. Add the cooked rice to the skillet and stir to combine all ingredients.
  7. Pour the soy sauce and sesame oil over the rice and mix well.
  8. Add the cooked shrimp back to the skillet and stir everything together until heated through.
  9. Season with salt and pepper to taste, and garnish with chopped green onions before serving.

Notes

  • For best results, use day-old rice as it is drier and prevents the dish from becoming mushy.
  • Feel free to customize the vegetables based on your preference or what you have on hand.
