A delicious and easy shrimp fried rice recipe loaded with fresh vegetables and savory flavors.
Ingredients

- 2 cups cooked rice (preferably day-old)
- 1 pound shrimp, peeled and deveined
- 1 cup mixed vegetables (carrots, peas, bell peppers, etc.)
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 2 green onions, chopped
- 1 egg, beaten
- Salt and pepper to taste
- Cooking oil for frying
Instructions
- Heat a large skillet or wok over medium-high heat and add a tablespoon of cooking oil.
- Add the shrimp to the skillet and cook until they turn pink and are cooked through, about 3-4 minutes. Remove the shrimp from the skillet and set aside.
- In the same skillet, add another tablespoon of oil and add the minced garlic. Sauté for about 30 seconds until fragrant.
- Add the mixed vegetables and cook for 2-3 minutes until they are tender.
- Push the vegetables to the side of the skillet and pour the beaten egg into the center. Scramble the egg until fully cooked, then mix it with the vegetables.
- Add the cooked rice to the skillet and stir to combine all ingredients.
- Pour the soy sauce and sesame oil over the rice and mix well.
- Add the cooked shrimp back to the skillet and stir everything together until heated through.
- Season with salt and pepper to taste, and garnish with chopped green onions before serving.
Notes
- For best results, use day-old rice as it is drier and prevents the dish from becoming mushy.
- Feel free to customize the vegetables based on your preference or what you have on hand.
