Ingredients

  • 4 cups water
  • 1/2 teaspoon salt
  • 1 cup shredded cheddar cheese
  • 1 pound shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 4 slices bacon, diced
  • 3 cloves garlic, minced
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon black pepper
  • 1/4 cup green onions, sliced

Instructions

  1. In a saucepan, bring water and salt to a boil. Stir in the grits and reduce heat to low. Cook for about 20 minutes, stirring occasionally until thickened.
  2. Stir in the cheddar cheese until melted and smooth. Set aside.
  3. In a large skillet, cook the diced bacon over medium heat until crispy. Remove bacon and set aside, leaving the drippings in the pan.
  4. Add olive oil to the skillet, then add the shrimp, garlic, cayenne, and black pepper. Cook until shrimp are pink and cooked through, about 3-5 minutes.
  5. To serve, spoon the cheesy grits onto plates, top with the shrimp mixture, and garnish with crispy bacon and green onions.

Notes

  • For a creamier texture, use half-and-half instead of water for the grits.
  • You can add a splash of lemon juice for brightness.
  • Feel free to adjust the spices to your taste.
