Ingredients

  • 2 cups sweet potatoes, peeled and cubed
  • 1 lb ground beef or lamb
  • 1 cup carrots, diced
  • 1 cup peas
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Boil sweet potatoes until tender, about 15 minutes.
  3. In a skillet, heat olive oil and sauté onion and garlic until fragrant.
  4. Add ground meat and cook until browned.
  5. Stir in carrots, peas, broth, tomato paste, thyme, salt, and pepper.
  6. Simmer for 10 minutes.
  7. Drain sweet potatoes and mash them.
  8. Spread meat mixture in a baking dish and top with mashed sweet potatoes.
  9. Bake for 25-30 minutes until golden.
