A comforting shepherd’s pie made with sweet potatoes.
Ingredients

- 2 cups sweet potatoes, peeled and cubed
- 1 lb ground beef or lamb
- 1 cup carrots, diced
- 1 cup peas
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup beef broth
- 1 tablespoon tomato paste
- 1 teaspoon thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 400°F (200°C).
- Boil sweet potatoes until tender, about 15 minutes.
- In a skillet, heat olive oil and sauté onion and garlic until fragrant.
- Add ground meat and cook until browned.
- Stir in carrots, peas, broth, tomato paste, thyme, salt, and pepper.
- Simmer for 10 minutes.
- Drain sweet potatoes and mash them.
- Spread meat mixture in a baking dish and top with mashed sweet potatoes.
- Bake for 25-30 minutes until golden.
Notes
- Use leftover meat for a quicker prep.
- Substitute ground turkey for a lighter option.
- Add cheese on top for extra flavor.
