Ingredients

  • 2 cups rolled oats
  • 1 cup peanut butter (or any nut butter)
  • 1/2 cup honey or maple syrup
  • 1/2 cup mini chocolate chips (optional)
  • 1/2 cup dried fruit (raisins, cranberries, etc.)
  • 1/4 cup chopped nuts (almonds, walnuts, etc.)
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a large mixing bowl, combine the rolled oats, peanut butter, honey, and vanilla extract.
  2. Mix well until all ingredients are combined.
  3. Fold in chocolate chips, dried fruit, and chopped nuts until evenly distributed.
  4. Line an 8×8 inch baking dish with parchment paper, leaving some overhang for easy removal.
  5. Press the mixture firmly into the prepared dish, smoothing the top with a spatula.
  6. Refrigerate for at least 1 hour to set.
  7. Once set, lift the granola bars out of the dish using the parchment paper and cut into squares or bars.
  8. Store in an airtight container in the refrigerator for up to 2 weeks.
