Instructions
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a large bowl, mix the grated carrots, flour, sugars, oil, and eggs until well combined.
- Add the baking powder, baking soda, spices, and salt, and mix until just combined.
- Divide the batter evenly between the prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
- Let the cakes cool in the pans for 10 minutes before transferring to wire racks to cool completely.
- For the frosting, beat the cream cheese and butter together until smooth, then gradually add the powdered sugar until fully incorporated.
- Once the cakes are cool, spread a layer of frosting on top of one cake layer, drizzle with salted caramel, and place the second layer on top.
- Frost the top and sides of the cake with the remaining cream cheese frosting and drizzle with more salted caramel before serving.
