Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine shredded rotisserie chicken, cooked rice or quinoa, mixed vegetables, cream of chicken soup, and half of the cheese. Season with salt and pepper to taste.
- Drizzle olive oil in a casserole dish and spread the chicken mixture evenly.
- Top with the remaining cheese.
- Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden.
