  • 4 large tortillas
  • 1 can black beans, rinsed and drained
  • 1 cup salsa
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine shredded rotisserie chicken, cooked rice, mixed vegetables, and barbecue sauce. Mix until well combined.
  3. Lay out the tortillas and divide the chicken mixture evenly among them. Sprinkle with shredded cheese and add black beans.
  4. Roll up the tortillas tightly and place them seam-side down in a baking dish.
  5. Pour salsa over the top of the tortillas and sprinkle with any remaining cheese.
  6. Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
