- 1 rotisserie chicken, shredded
- 2 cups cooked rice
- 1 cup mixed vegetables (frozen or fresh)
- 1 cup barbecue sauce
- 1 cup shredded cheese (cheddar or mozzarella)
- 4 large tortillas
- 1 can black beans, rinsed and drained
- 1 cup salsa
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine shredded rotisserie chicken, cooked rice, mixed vegetables, and barbecue sauce. Mix until well combined.
- Lay out the tortillas and divide the chicken mixture evenly among them. Sprinkle with shredded cheese and add black beans.
- Roll up the tortillas tightly and place them seam-side down in a baking dish.
- Pour salsa over the top of the tortillas and sprinkle with any remaining cheese.
- Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
