Ingredients

- 4 lamb chops
- 2 tbsp olive oil
- 1 tbsp fresh rosemary, chopped
- 2 garlic cloves, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 4 medium potatoes, cubed
- 1 cup Greek yogurt
- 1/4 cup fresh mint, chopped
- 1 tbsp lemon juice
Instructions
- Preheat oven to 400°F (200°C).
- Toss potatoes with 1 tbsp olive oil, salt, and pepper. Roast for 30 minutes.
- Rub lamb chops with remaining oil, rosemary, garlic, salt, and pepper.
- Heat a skillet over medium-high heat. Cook lamb chops for 3-4 minutes per side.
- Mix yogurt, mint, and lemon juice to make the sauce.
- Serve lamb chops with roasted potatoes and mint yogurt sauce.

- Let lamb rest for 5 minutes before serving.
- Use fresh rosemary for best flavor.
