  • 2 cups assorted vegetables (zucchini, bell peppers, red onion, etc.), roasted
  • 1 cup goat cheese, crumbled
  • 1/2 cup heavy cream
  • 2 large eggs
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry on a lightly floured surface and fit it into a tart pan. Trim any excess pastry.
  3. In a bowl, whisk together the eggs, heavy cream, thyme, salt, and pepper.
  4. Spread the roasted vegetables evenly over the pastry crust.
  5. Pour the egg mixture over the vegetables, then sprinkle the crumbled goat cheese on top.
  6. Bake in the preheated oven for 25-30 minutes, or until the tart is golden and set.
