- 1 pre-made puff pastry sheet, thawed
- 2 cups assorted vegetables (zucchini, bell peppers, red onion, etc.), roasted
- 1 cup goat cheese, crumbled
- 1/2 cup heavy cream
- 2 large eggs
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Roll out the puff pastry on a lightly floured surface and fit it into a tart pan. Trim any excess pastry.
- In a bowl, whisk together the eggs, heavy cream, thyme, salt, and pepper.
- Spread the roasted vegetables evenly over the pastry crust.
- Pour the egg mixture over the vegetables, then sprinkle the crumbled goat cheese on top.
- Bake in the preheated oven for 25-30 minutes, or until the tart is golden and set.
- Allow to cool slightly before garnishing with fresh basil. Slice and serve warm.
