Ingredients

- 2 medium sweet potatoes, peeled and cubed
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup cooked quinoa
- 2 cups fresh spinach or kale
- 1 avocado, sliced
- 1/4 cup tahini
- 2 tbsp lemon juice
- 1 tbsp maple syrup
- 2 tbsp water
- 1/4 tsp garlic powder
Instructions
- Preheat oven to 400°F (200°C).
- Toss sweet potatoes with olive oil, salt, and pepper. Spread on a baking sheet.
- Roast for 25-30 minutes until tender.
- Whisk tahini, lemon juice, maple syrup, water, and garlic powder to make the dressing.
- Assemble bowls with quinoa, greens, roasted sweet potatoes, and avocado.
- Drizzle with tahini dressing before serving.
Notes
- Store leftovers in an airtight container for up to 2 days.
- Swap quinoa for brown rice or farro if preferred.
- Add chickpeas or tofu for extra protein.
