Ingredients

  • 2 medium sweet potatoes, peeled and cubed
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cooked quinoa
  • 2 cups fresh spinach or kale
  • 1 avocado, sliced
  • 1/4 cup tahini
  • 2 tbsp lemon juice
  • 1 tbsp maple syrup
  • 2 tbsp water
  • 1/4 tsp garlic powder

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss sweet potatoes with olive oil, salt, and pepper. Spread on a baking sheet.
  3. Roast for 25-30 minutes until tender.
  4. Whisk tahini, lemon juice, maple syrup, water, and garlic powder to make the dressing.
  5. Assemble bowls with quinoa, greens, roasted sweet potatoes, and avocado.
  6. Drizzle with tahini dressing before serving.
