- 1 pound red potatoes, diced
- 1 pound asparagus, trimmed and cut into pieces
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine red potatoes, asparagus, olive oil, garlic powder, salt, and pepper.
- Toss until the vegetables are well coated.
- Spread the mixture on a baking sheet.
- Roast in the oven for 25-30 minutes, or until the potatoes are tender and golden.
- Stir halfway through cooking for even roasting.
Notes
- For added flavor, sprinkle with Parmesan cheese before serving.
