Description

Creamy and flavorful roasted garlic red mashed potatoes.


Ingredients

  • 2 pounds red potatoes
  • 1 head of garlic
  • 1/2 cup milk
  • 1/4 cup butter
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the top off the head of garlic and drizzle with olive oil.
  3. Wrap the garlic in foil and roast for 30-35 minutes.
  4. Wash and peel the red potatoes, then cut them into chunks.
  5. Boil the potatoes in salted water until tender, about 15-20 minutes.
  6. Drain the potatoes and return them to the pot.
  7. Squeeze the roasted garlic into the pot with the potatoes.
  8. Add milk and butter, then mash until smooth.
  9. Season with salt and pepper to taste.

Notes

  • For extra creaminess, add more butter or milk.
  • Store leftovers in the refrigerator for up to 3 days.
  • Reheat in the microwave or on the stove.
