Creamy and flavorful roasted garlic red mashed potatoes.
Ingredients
Scale
- 2 pounds red potatoes
- 1 head of garlic
- 1/2 cup milk
- 1/4 cup butter
- Salt to taste
- Pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the top off the head of garlic and drizzle with olive oil.
- Wrap the garlic in foil and roast for 30-35 minutes.
- Wash and peel the red potatoes, then cut them into chunks.
- Boil the potatoes in salted water until tender, about 15-20 minutes.
- Drain the potatoes and return them to the pot.
- Squeeze the roasted garlic into the pot with the potatoes.
- Add milk and butter, then mash until smooth.
- Season with salt and pepper to taste.
Notes
- For extra creaminess, add more butter or milk.
- Store leftovers in the refrigerator for up to 3 days.
- Reheat in the microwave or on the stove.
