Ingredients

  • 2 pounds potatoes, peeled and cubed
  • 1 head of garlic
  • 1/2 cup milk
  • 1/4 cup butter
  • Salt and pepper to taste
  • Chives or parsley for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the top off the head of garlic to expose the cloves. Drizzle with olive oil and wrap in foil. Roast in the oven for about 30-35 minutes, until the cloves are soft and caramelized.
  3. While the garlic is roasting, boil the cubed potatoes in salted water until tender, about 15-20 minutes. Drain well.
  4. Once the garlic is cool enough to handle, squeeze the roasted cloves out of their skins into a mixing bowl.
  5. Add the drained potatoes, milk, butter, salt, and pepper to the bowl with the garlic. Mash until smooth and creamy.
  6. Taste and adjust seasoning as needed. Serve hot, garnished with chives or parsley if desired.
