- 2 pounds potatoes, peeled and cubed
- 1 head of garlic
- 1/2 cup milk
- 1/4 cup butter
- Salt and pepper to taste
- Chives or parsley for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the top off the head of garlic to expose the cloves. Drizzle with olive oil and wrap in foil. Roast in the oven for about 30-35 minutes, until the cloves are soft and caramelized.
- While the garlic is roasting, boil the cubed potatoes in salted water until tender, about 15-20 minutes. Drain well.
- Once the garlic is cool enough to handle, squeeze the roasted cloves out of their skins into a mixing bowl.
- Add the drained potatoes, milk, butter, salt, and pepper to the bowl with the garlic. Mash until smooth and creamy.
- Taste and adjust seasoning as needed. Serve hot, garnished with chives or parsley if desired.
