Ingredients

- 2 medium beets, peeled and cubed
- 3 medium carrots, peeled and sliced
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 ball burrata cheese
- 2 cups mixed greens
- 1 tbsp balsamic glaze
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the beets and carrots with olive oil, salt, and pepper.
- Spread them on a baking sheet and roast for 25-30 minutes, until tender.
- Arrange the mixed greens on a serving plate.
- Top with the roasted beets and carrots.
- Place the burrata ball in the center.
- Drizzle with balsamic glaze before serving.

- You can substitute burrata with fresh mozzarella if preferred.
