Ingredients

- 3 lbs beef roast
- 2 tbsp olive oil
- 1 tbsp salt
- 1 tsp black pepper
- 2 cups beef broth
- 4 cloves garlic, minced
- 1 onion, quartered
- 2 carrots, chopped
- 2 stalks celery, chopped
- 1 tsp thyme
Instructions
- Preheat your oven to 350°F (175°C).
- Rub the beef roast with olive oil, salt, and pepper.
- Place the roast in a roasting pan.
- Add the garlic, onion, carrots, celery, and thyme around the roast.
- Pour the beef broth into the pan.
- Cover with foil and roast for 2 hours.
- Remove the foil and roast for an additional 30 minutes, until the internal temperature reaches 135°F (57°C).
- Let the roast rest for 15 minutes before slicing.
Notes
- Serve with mashed potatoes or green beans for sides.
- Adjust cooking time based on desired doneness.
