Ingredients

  • 1 tsp thyme

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Rub the beef roast with olive oil, salt, and pepper.
  3. Place the roast in a roasting pan.
  4. Add the garlic, onion, carrots, celery, and thyme around the roast.
  5. Pour the beef broth into the pan.
  6. Cover with foil and roast for 2 hours.
  7. Remove the foil and roast for an additional 30 minutes, until the internal temperature reaches 135°F (57°C).
  8. Let the roast rest for 15 minutes before slicing.
