Description
A delicious roast beef dinner with complementary side dishes.
Ingredients

- 3 lbs roast beef
- 2 tbsp olive oil
- 2 tsp salt
- 1 tsp black pepper
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 tbsp rosemary, chopped
- 1 tbsp thyme, chopped
- 1 lb potatoes, chopped
- 2 cups carrots, sliced
- 1 cup green beans, trimmed
Instructions
- Preheat oven to 375°F (190°C).
- Rub the roast beef with olive oil, salt, black pepper, and garlic.
- Place the roast in a roasting pan.
- Add beef broth, rosemary, and thyme to the pan.
- Surround the roast with potatoes and carrots.
- Cover the pan with foil and roast for 1.5 hours.
- Remove the foil and add green beans.
- Roast for an additional 30 minutes or until the beef reaches desired doneness.
- Let the roast rest for 15 minutes before slicing.
Notes
- Serve with gravy made from pan drippings.
- Pair with a red wine for a complete meal.
- Store leftovers in the refrigerator for up to 3 days.
