- 4 cups rhubarb, chopped
- 1 cup granulated sugar
- 1/4 cup all-purpose flour
- 1 tablespoon lemon juice
- 1 cup rolled oats
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar, packed
- 1/2 teaspoon ground cinnamon
- 1/2 cup unsalted butter, melted
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the chopped rhubarb, granulated sugar, 1/4 cup flour, and lemon juice. Toss to coat the rhubarb evenly.
- Spread the rhubarb mixture evenly in a greased 9×13 inch baking dish.
- In another bowl, mix the rolled oats, 1/2 cup flour, brown sugar, and cinnamon. Pour in the melted butter and stir until the mixture is crumbly.
- Sprinkle the oat mixture evenly over the rhubarb layer in the baking dish.
- Bake in the preheated oven for 35-40 minutes, or until the topping is golden brown and the rhubarb is bubbly.
