Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 2 cups rhubarb, chopped
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon baking powder
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9 inch baking pan or line it with parchment paper.
  2. In a mixing bowl, combine flour, softened butter, granulated sugar, and salt. Mix until crumbly.
  3. Press the mixture firmly into the bottom of the prepared baking pan to form the crust.
  4. In another bowl, combine chopped rhubarb, sugar, cornstarch, eggs, vanilla extract, and baking powder. Mix until well combined.
  5. Pour the rhubarb mixture over the crust in the baking pan.
  6. Bake for 25-30 minutes or until the filling is set and the edges are lightly golden.
  7. Allow to cool completely in the pan before cutting into bars.
  8. Dust with powdered sugar before serving, if desired.

Notes

  • Fresh rhubarb is best for this recipe, but frozen can be used if thawed and drained.
  • These bars can be stored in the refrigerator for up to 5 days.
  • For an extra touch, serve with whipped cream or vanilla ice cream.
