- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 2 cups rhubarb, chopped
- 1 cup granulated sugar
- 1/4 cup cornstarch
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/4 teaspoon baking powder
- Powdered sugar for dusting (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×9 inch baking pan or line it with parchment paper.
- In a mixing bowl, combine flour, softened butter, granulated sugar, and salt. Mix until crumbly.
- Press the mixture firmly into the bottom of the prepared baking pan to form the crust.
- In another bowl, combine chopped rhubarb, sugar, cornstarch, eggs, vanilla extract, and baking powder. Mix until well combined.
- Pour the rhubarb mixture over the crust in the baking pan.
- Bake for 25-30 minutes or until the filling is set and the edges are lightly golden.
- Allow to cool completely in the pan before cutting into bars.
- Dust with powdered sugar before serving, if desired.
Notes
- Fresh rhubarb is best for this recipe, but frozen can be used if thawed and drained.
- These bars can be stored in the refrigerator for up to 5 days.
- For an extra touch, serve with whipped cream or vanilla ice cream.
