- 4 cups rhubarb, chopped
- 1 cup granulated sugar
- 1 tablespoon all-purpose flour
- 1 teaspoon vanilla extract
- 1 cup rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar, packed
- 1/2 teaspoon cinnamon
- 1/2 cup unsalted butter, melted
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the chopped rhubarb, granulated sugar, flour, and vanilla extract. Mix well and pour into a greased 9×13 inch baking dish.
- In another bowl, mix together the oats, flour, brown sugar, and cinnamon. Pour the melted butter over the mixture and stir until crumbly.
- Spread the oat mixture evenly over the rhubarb in the baking dish.
- Bake for 35-40 minutes or until the topping is golden brown and the rhubarb is bubbly.
- Remove from the oven and let it cool slightly before serving.
