Ingredients

Instructions

  1. Rinse the red lentils under cold water.
  2. In a pot, sauté onion, carrots, and celery until soft.
  3. Add garlic, cumin, and turmeric; cook for 1 minute.
  4. Stir in the lentils and broth; bring to a boil.
  5. Reduce heat and simmer for 20-25 minutes until lentils are tender.
  6. Add spinach and cook for an additional 5 minutes.
  7. Season with salt and pepper.
