Description
A hearty and nutritious red lentil soup with spinach.
Ingredients

- 1 cup red lentils
- 4 cups vegetable broth
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon turmeric
- 2 cups fresh spinach
- Salt and pepper to taste
Instructions
- Rinse the red lentils under cold water.
- In a pot, sauté onion, carrots, and celery until soft.
- Add garlic, cumin, and turmeric; cook for 1 minute.
- Stir in the lentils and broth; bring to a boil.
- Reduce heat and simmer for 20-25 minutes until lentils are tender.
- Add spinach and cook for an additional 5 minutes.
- Season with salt and pepper.
- Serve hot.
