Description

A rich and creamy chocolate mousse with a hint of raspberry, perfect for any dessert lover.


Ingredients

  • 1 cup fresh raspberries, plus more for garnish
  • 1 tablespoon sugar
  • 1/4 cup water
  • 1 cup heavy cream, divided
  • 6 ounces dark chocolate, chopped
  • 2 large egg whites
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a small saucepan, combine raspberries, 1 tablespoon sugar, and water. Cook over medium heat until raspberries break down and mixture thickens, about 5 minutes. Strain through a fine mesh sieve to remove seeds. Set aside to cool.
  2. In a medium heatproof bowl, combine dark chocolate and 1/2 cup heavy cream. Set over a pot of simmering water, stirring until chocolate is melted and smooth. Remove from heat and let cool slightly.
  3. In a separate bowl, whip remaining 1/2 cup heavy cream until soft peaks form. Set aside.
  4. In another bowl, beat egg whites with a pinch of salt until soft peaks form. Gradually add 2 tablespoons sugar, continuing to beat until stiff peaks form.
  5. Fold the whipped cream into the melted chocolate mixture until combined. Then, fold in the egg whites gently until just incorporated.
  6. Divide the mousse into serving dishes and layer with raspberry sauce. Refrigerate for at least 2 hours to set.
  7. Serve chilled, garnished with fresh raspberries.

Notes

  • You can substitute fresh raspberries with frozen ones if needed.
  • Make sure the chocolate is not too hot when folding in the whipped cream and egg whites to avoid melting them.
