A rich and creamy chocolate mousse with a hint of raspberry, perfect for any dessert lover.
Ingredients

- 1 cup fresh raspberries, plus more for garnish
- 1 tablespoon sugar
- 1/4 cup water
- 1 cup heavy cream, divided
- 6 ounces dark chocolate, chopped
- 2 large egg whites
- 2 tablespoons granulated sugar
- 1/2 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a small saucepan, combine raspberries, 1 tablespoon sugar, and water. Cook over medium heat until raspberries break down and mixture thickens, about 5 minutes. Strain through a fine mesh sieve to remove seeds. Set aside to cool.
- In a medium heatproof bowl, combine dark chocolate and 1/2 cup heavy cream. Set over a pot of simmering water, stirring until chocolate is melted and smooth. Remove from heat and let cool slightly.
- In a separate bowl, whip remaining 1/2 cup heavy cream until soft peaks form. Set aside.
- In another bowl, beat egg whites with a pinch of salt until soft peaks form. Gradually add 2 tablespoons sugar, continuing to beat until stiff peaks form.
- Fold the whipped cream into the melted chocolate mixture until combined. Then, fold in the egg whites gently until just incorporated.
- Divide the mousse into serving dishes and layer with raspberry sauce. Refrigerate for at least 2 hours to set.
- Serve chilled, garnished with fresh raspberries.
Notes
- You can substitute fresh raspberries with frozen ones if needed.
- Make sure the chocolate is not too hot when folding in the whipped cream and egg whites to avoid melting them.
