- 8 oz (225 g) rotini pasta
- 1 cup (150 g) cherry tomatoes, halved
- 1 cup (150 g) cucumber, diced
- 1/2 cup (75 g) red bell pepper, diced
- 1/2 cup (75 g) red onion, finely chopped
- 1 cup (150 g) shredded cheddar cheese
- 1/2 cup (120 ml) ranch dressing
- 1/4 cup (60 ml) sour cream
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
- In a large bowl, combine the cooled pasta, cherry tomatoes, cucumber, red bell pepper, red onion, and cheddar cheese.
- In a separate small bowl, whisk together the ranch dressing and sour cream until smooth.
- Pour the dressing mixture over the pasta salad and toss until well combined. Season with salt and pepper to taste.
- Cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
- Garnish with fresh parsley if desired before serving.
