Ingredients

  • 8 oz (225 g) rotini pasta
  • 1 cup (150 g) cherry tomatoes, halved
  • 1 cup (150 g) cucumber, diced
  • 1/2 cup (75 g) red bell pepper, diced
  • 1/2 cup (75 g) red onion, finely chopped
  • 1 cup (150 g) shredded cheddar cheese
  • 1/2 cup (120 ml) ranch dressing
  • 1/4 cup (60 ml) sour cream
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. In a large bowl, combine the cooled pasta, cherry tomatoes, cucumber, red bell pepper, red onion, and cheddar cheese.
  3. In a separate small bowl, whisk together the ranch dressing and sour cream until smooth.
  4. Pour the dressing mixture over the pasta salad and toss until well combined. Season with salt and pepper to taste.
  5. Cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
  6. Garnish with fresh parsley if desired before serving.
