A quick and healthy quinoa veggie stir-fry packed with protein and nutrients.
Ingredients

- 1 cup quinoa
- 2 cups water
- 1 tbsp olive oil
- 1 bell pepper, sliced
- 1 carrot, julienned
- 1 cup broccoli florets
- 2 cloves garlic, minced
- 1 tbsp soy sauce
- 1 tsp ginger, grated
- 1/2 cup peas
Instructions
- Rinse quinoa under cold water.
- Cook quinoa in 2 cups water for 15 minutes.
- Heat olive oil in a pan.
- Add garlic and ginger, sauté for 30 seconds.
- Add bell pepper, carrot, and broccoli. Stir-fry for 5 minutes.
- Add cooked quinoa and peas.
- Pour soy sauce over the mixture.
- Stir-fry for another 2 minutes.
Notes
- Use tamari for a gluten-free option.
- Add tofu or chicken for extra protein.
- Store leftovers in an airtight container for up to 3 days.
