- 1 cup sugar
- 1/2 cup brown sugar
- 1/2 cup melted butter
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon salt
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 cup chopped nuts (optional)
- Whipped cream for serving (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a large bowl, combine the pumpkin puree, sugar, brown sugar, melted butter, eggs, vanilla extract, pumpkin pie spice, and salt. Mix until smooth.
- Sift in the flour and baking powder, then fold until just combined. If using, add the chopped nuts.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool for a few minutes before slicing into squares.
- Serve warm with whipped cream if desired.
Notes
- For a quick variation, you can use store-bought pumpkin bread mix instead of the homemade batter.
