Ingredients

  • 2 cups vegetable broth
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or fresh
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1 lime, juiced
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil.
  3. Reduce heat and simmer for 15 minutes, or until liquid is absorbed.
  4. In a large bowl, combine cooked quinoa, black beans, corn, and red bell pepper.
  5. Drizzle lime juice over the mixture and add cumin.
  6. Season with salt and pepper to taste.
  7. Top with diced avocado before serving.
